Once November rolls around my mind immediately turns to the holidays. I love Thanksgiving. Getting together with friends and family for a delicious home-cooked meal is such a wonderful way to end the season. This year I’m hosting a “Friendsgiving” for my housemates at college. It’s a potluck dinner so each of us are in charge of bringing a dish to the celebration. My contribution? The perfect fall dessert – these delicious pecan pie bites.
In my eyes, there is nothing better than homemade pecan pie. The store-bought kind just can’t measure up to the delight of making one in your own kitchen. The smell of vanilla and pecans as the pie bakes is simply divine and the end result can’t be beat.
For me, the perfect pecan pie combines a nice flaky crust with a rich pecan filling. I’m not a huge fan of syrupy fillings so I focus on making sure there are lots of pecans. Even so, the sweetness can sometimes be overpowering so I love the idea of little pecan pie bites. Their small size means it’s okay to have more than one (or maybe quite a few). A perfect sweet treat for any party!
These pecan pie bites have a wonderful buttery crust that is simple as can be to make and only requires 4 ingredients! The brown sugar adds a richness to the crust while the butter and flour make it nice and flaky.
To get started on the crusts, preheat the oven to 350°F.
Using an electric mixer beat the butter and brown sugar together until creamy.
Add the flour and salt a little at a time and continue to beat until well combined. It’s always best to add your flour in parts: add too much and you’ll end up with a big mess.
Separate the dough into twelve parts and place them into a mini muffin tin. Using your fingers, press the dough evenly up the sides of each mini muffin cup. Fun tip: because this dough does not contain eggs, it makes an excellent base for cookie dough bites, just add mini chocolate chips and enjoy!
Once you have the crusts prepared it is time to get started on the filling. I modified this recipe from a couple of different sources to create a perfectly nutty and sweet bite without all the extra goop.
Add 1 teaspoon of butter to a medium saucepan along with the chopped pecans. Toast for about 10 minutes stirring frequently until the nuts are golden-brown and fragrant.
Meanwhile use a small bowl to combine the brown sugar, the melted butter, vanilla extract, salt, and corn syrup. Stir until thoroughly mixed.
Add in the toasted pecans and stir until well coated.
Spoon the filling into each crust.
Place the muffin tin into the oven and bake for 15 minutes or until the crust turns golden brown.
Remove the tin from the oven and allow to cool completely before serving. Enjoy!
